Eggplant Parmesan with Parsley Orzo

We love this recipe: Eggplant Parmesan with Parsley Orzo


This Cooking Light recipe is a favorite. I would say that as far as eggplant goes, the smaller and more narrow, the better.

Eggplant can be bitter, so peeling it to make it look like Beetlejuice's suit and salting it are key.

Also, I prefer to use the small balls of mozzarella for the broiling phase. But, you use what you have on hand sometimes.

In any case, please enjoy with a robust Italian wine.
