Linguine with Ricotta Meatballs

Linguine with Ricotta Meatballs

You know how some recipes say they are fast and then you think that whoever determined that was confused? This is not one of those recipes.

It is so easy and fast. Also, you can substitute other ground meat. I recommend ground turkey.

This recipe introduced us to the Dell'Amore marinara sauce. It is now a favorite. Also, I recommend using the full jar because more sauce is better than less sauce.

It's Italian- so break out the Chianti!

Eggplant Parmesan with Parsley Orzo

We love this recipe: Eggplant Parmesan with Parsley Orzo

This Cooking Light recipe is a favorite. I would say that as far as eggplant goes, the smaller and more narrow, the better.

Eggplant can be bitter, so peeling it to make it look like Beetlejuice's suit and salting it are key.

Also, I prefer to use the small balls of mozzarella for the broiling phase. But, you use what you have on hand sometimes.

In any case, please enjoy with a robust Italian wine.

The first week back at work after a lovely holiday was rough.

Thank goodness for delivery pizza and wings, and for T's awesome martinis shaking skills.

Italian Braised Pork and Polenta

This is a favorite crock pot recipe.

Because I had a leftover pork tenderloin in the freezer, I used that cut of meat.

Leftovers and Capri-Sun-tini

Tonight we got home having both had long days at work. T had a work dinner and I enjoyed leftovers (spaghetti squash lasagne).

I tell you this truth: re-entry to the office after a week+ on holiday is a sunuva.

Thankfully, I had picked up some treats at the Duty Free shop in San Juan.

I'm not going to swear this was the best martini I have tasted, but it certainly was yummy. And really, it comes in a pouch with a straw. Good stuff.

Honey Ginger Chicken and Vanilla Rice

I did not cook! Tony did! This was his second attempt at this recipe: Honey Ginger Chicken and Vanilla Rice

The first time was not excellent, but this time it was fab. Super easy and excellent flavors.

I think the improvement was because he dredged in ginger paste, then flour, an then salted and peppered in the pan. I'm pretty sure the original order was to flour first. Lesson learned.

Also, he pounded the chicken to a uniform thickness and cut into similarly sized pieces.

The rice was Mahatma white basmati, with 2 t of sugar added and 1/2 t of vanilla.

Make sure to drizzle with honey- Publix Greenwise was in our house.

Make sure to enjoy with wine. Tonight we had Rodney Strong Merlot.
