I make this with chicken, not turkey. Double the spices.

Serve with "just bake it" bread if you can find it.

Note: This was a great recipe. I used regular corn meal in place of polenta to cut down on cooking time. Also I doubled the sauce because who wants a dry turkey meatball? Nobody.

This is a favorite. We usually use more onion than necessary and often an extra bell pepper- yellow. It is hearty. I say it is more than 2 servings especially when you serve over basmati rice.

Chicken Parmesan

We have family coming over this week and will have an Italian feast.

This is a great Veal Parm recipe, and excellent for Chicken, too.

Even when we make it to serve 2 (plus a leftover for me) we double the sauce, so consider that. Chicken Parmesan

Serve over fresh pasta.

Or dried pasta. Whatever flips your skirt.

Sake Sea Bass in Parchment

This is an easy and amazing recipe. I usually cook for longer than it says depending on the size of the fish. Double the sauce and reduce half of it while the fish bakes. You will enjoy extra over rice, I promise.

I serve with steamed baby bok choy and rice that I sautéed with ginger and green onions in a bit of sesame oil. Sake Sea Bass in Parchment

So low cal and so tasty. As with most things that call for fish sauce, I will use half of what is called for or replace with clam juice.

Veal Parm


This is our favorite Veal Parm Recipe. You will not want to have it in a restaurant after you make this. Recipe: Veal Parmesan

I recommend broiling to get the cheese bubbly.

Also serve with a fresh pasta and as such, you will want to double the sauce. Maybe triple depending on how saucy you like it.

This sauce does not taste canned. It tastes really authentic.

Rosemary and Ravioli Chicken Soup

T has been under the weather,so this soup recipe arrived just in time. It was included in a flyer that accompanied Eating Well Magazine.

Here is the recipe:Rosemary and Ravioli Chicken Soup

We used the whole rotisserie chicken (minus the bits shared with the pups and those snuck by Tony as I was pulling it apart) so I doubled the broth.

I used spinach tortellini so the pasta would be bite sized.

It was really good and next time, I think I will add more veggies. Carrots and celery would be nice.

We enjoyed it with a nice loaf of Tuscan Garlic Bread from Publix.

Mu Shu Pork Wraps

So good, but a lot of prep: Mu Shu Pork Wraps

I am not sure how to fit 2/3 of a C of mix inside one wrap, but if they think so, I guess someone can.

I cannot tell you how easy and tasty this recipe is: Sate Burgers

Somehow it fell out of rotation and I actually clapped to myself when it showed up in a Facebook Memory last week.

I recommend to make this exactly as describe, with a singular exception- ditch the fish sauce and substitute clam juice. If you must just fish sauce, use half of what is recommended.

Serve with steamed spinach and brown rice. I like to add a bit of Sriracha for spice.

Pierogies with Sautéed Onion, Bacon, and Peas

Pierogies and Bacon, Yes!!!!

It is a Cooking Light Recipe, and I'm not sure how, but who am I to question the fine people at CL?

I use Greek yogurt in place of Sour Cream and I use more bacon than it calls for because bacon. Good luck getting four servings out of this. People gobble it up.

Sometimes we use Mrs. T's frozen Pierogies, but today, we had fresh (maybe from frozen) ones from Sprouts.

Enchilada Casserole with Spicy Black Beans

This is a favorite Sunday night recipe. It takes too much time to make during the week, but is perfect for the weekend.

Pro tip: The El Pato tomato sauce can be found in local grocery stores. Check the ethnic foods aisle.

Also, I make my own taco seasoning- save the sodium! Skinny Ms Taco Seasoning

Sushinobo in Vinings

We have been patrons here for years, and I feel a lot like Norm Peterson when I walk in (in the best possible way).






















That last roll is my special recipe- smoked salmon, jalapeño,cream cheese, and avocado with sesame seeds on top. Perfection. Also, the jalapeño was on fire.

It took about one hour, including prep, and tasted fantastic.
